Even if they couldn't code it in a way that allows you to DRIVE and SELL, another good way would be to place a taco truck somewhere as a building structure (non-drivable and non-destructible), and give it the necessary scripts to run as a store/business! Maybe somewhere between Pillbox and Benny's?
